Instead of a can of tomatoes I used two pounds of peeled fresh tomatoes and a tad more of tomato paste.

wonderful. i added some garden tomatoes as i have an abundance this year. the soup needed an overnight rest before the flavors came into their own. it was amazing, after an overnight sleep in the fridge. the lime juice settles down the flavors and brings them to a great high.

Great recipe--I ruined it by forgetting to take out the cilantro stems before blending, though. It was clearly very tasty, but had a bitter aftertaste as a result of the stems.

--Use good canned tomatoes like San Marzano.
--Used chicken stock instead of water
--Added a little light buttermilk, which added a nice creaminess.

This is a simple and delicious soup! I added a dollop of Greek yogurt to each bowl and ate it warm (couldn’t wait!). It’s in the repertoire! Perhaps I’ll add black beans and/or corn the next time!

I make this often using canned diced tomatoes, and it’s still wonderful. I always double the recipe, and I let the soup cool completely in the fridge with the cilantro in it. I find this is a lot safer for me when using a hand blender! Then I simply remove the cilantro, and use my stick blender. I love having container or two of this in the freezer. Here in Hawaii, it’s a perfect addition to a sandwich supper.

Really delicious and easy soup. I omitted the lime juice and ate it warm with a crusty grilled cheddar sandwich. I may add some fresh chopped jalapeño next time for a little extra zippiness. I used canned whole San Marzano tomatoes. If you don’t have a hand blender I highly recommend that investment, it’s much easier and safer to blend hot soup right in the pot.

We did not like this cold. Reheated it the next day for lunch and it was delicious. I always use my homemade vegie scrap broth instead of water In recipes and it takes the complexity of flavor to a whole new level.

We loved this but it needed additional salt. I followed the recipe exactly using a 28oz can of San Marzano tomatoes and the juice of a whole lime at the end. My cilantro averse family members enjoyed the cilantro infusion without the actual cilantro leaves. Somehow they didn´t experience the usual soapiness

No - then it would remind you of cold spaghetti sauce. The cilantro gives it a unique flavor perfect in a cold soup in summer.

How the heck can you mark this as a 45 minute recipe when you have to chill it "at least 4 hours or overnight" ?

Use V8 to boost the stock instead of water.One can also add a splash of favorite bloody mary mix to liven up cold soup.This cold soup is best when it is so hot out side one does not feel like eating a big dinner.
