Time to bring back to life another old recipe, an old but gold I'd say: my no baking powder waffles with whole wheat flour and basically no sugar (except for the honey!).

This recipe is easy, quick, foolproof; it has fibers and no excessive amount of sugar in it. Is there anything better?! You just found the perfect healthy waffle recipe to brighten your breakfast up, my friend!

Recipe ingredients

These whole wheat homemade waffles are delicious yet super simple to make. Ingredients are also super easy to find so...no excuses!:)

For this recipe you'll need:

  • Whole wheat flour
  • A good vanilla extract - preferably homemade
  • Egg
  • Honey (substitute with maple syrup if vegan)
  • Yogurt (or plant based yogurt if you're vegan/intolerant)
  • Milk (or plant based milk if you're vegan/intolerant)
  • Baking soda
  • Lemon juice

Result? Crispy waffles that you can enjoy with your favorite toppings when you want a delicious but healthy breakfast. [P.S. The reason why I don't call these Belgian waffles is that I never want to offend food from other places eheh but they're probably very similar]

The best waffle toppings

Let's talk about the toppings. I am curious to know: what do you usually top your waffles with? I am usually pretty "minimal" and eat them with fresh fruit and maple syrup, but you can also top them with:

  • Bananas
  • Berries
  • Peaches
  • Pears
  • Honey
  • Chocolate chips (add them when waffles are warm)
  • Melted chocolate
  • Lemon curd
  • For something indulgent: whipped cream or ice cream
  • For savory options: eggs, bacon, crispy fried chicken

You can combine some of these toppings (peaches and blueberries with maple syrup mmm), you can caramelize fruit, you can use chocolate chips INSIDE the batter too... Have fun!

How to prepare them

The word simple is not enough to describe how easy these are. You'll just have to:

  • First, preheat the waffle maker. This is a key step.
  • Then prepare the waffle batter: in a bowl add all purpose flour and salt; in another bowl add vanilla, egg, honey and yogurt.
  • Stir well then combine the flour into the egg mixture.
  • Now gradually pour the milk into the batter: the mixture should not be too thick or too runny.
  • Lastly, add baking soda and lemon juice (on top of baking soda so it forms bubbles). This will make waffles rise.
  • Spray the waffle iron with non-stick cooking spray (or vegetable oil), then pour about 2 tablespoons of batter for each waffle and cook for a few minutes until they're golden brown and don’t stick to the iron anymore.
  • Resist the urge to peek and don’t lift the lid!

Storage instructions for delicious waffles

I am a little bit sorry to disappoint you but these delicious waffles give their best when you eat them immediately, so they're still crunchy.

If you have leftovers though, you can store them into an airtight container and then (if anything after one day) reheat them in a hot pan (and hope for crispy waffles:))

Tips & tricks

What happens if you don't use baking powder in waffles?

If you don't use baking powder, the waffles will turn out crispier. In this recipe, I've used just a tiny bit of baking soda and lemon juice, so the waffles are crispy on the outside. If you want to make them fluffier, add some extra leavening agent.

But I can guarantee, waffles without baking powder are equally delicious!

Can you use baking soda instead of baking powder?

Of course! This is how I made THESE waffles! I've used half a teaspoon of soda and one of lemon juice, also yogurt plays its part here.

BonAppetit says that "baking soda has 4 times the power of baking powder, so ¼ teaspoon soda is equivalent to 1 teaspoon of baking powder." Hence, half a teaspoon should work as 2 teaspoons of baking powder here.

Trick: add baking soda + lemon at the end, when batter is ready to be cooked.

Is baking soda the same thing as baking powder?

Actually no. Baking soda is a pure leavening agent and it reacts when combined with an acidic substance (lemon juice or vinegar, or cream of tartar).

Baking powder contains baking soda and other ingredients like cornstarch and a powdered acidic substance. In simple terms, it's ready to use. It's up to you to decide what to use in your recipes.

Waffle Recipe Without Baking Powder

They're easy, foolproof, healthy, crispy on the outside and fluffy on the inside: these no baking powder waffles are the perfect breakfast!

Servings: 5 waffles

Ingredients

  • 100 gr Whole wheat flour
  • a pinch Salt
  • 1 teaspoon Vanilla extract
  • 1 Egg
  • 1 tablespoon Honey
  • 45/50 gr Yogurt (or plant based yogurt)
  • 70/80 gr Milk or plant based milk
  • half a teaspoon Baking soda
  • 1 teaspoon Lemon juice

Instructions

  • Preheat the waffle maker.

  • In a bowl, add the flour, salt and set aside.

  • In another bowl, add vanilla extract, egg, honey and yogurt and stir well.

  • Pour the flour into the egg mixture.

  • Now gradually pour the milk: the mixture should not be too thick or too runny (watch video above)

  • If it’s creamy enough, do not add any more milk.

  • Lastly, add the baking soda and the lemon juice on top of baking soda so it bubbles. They’ll make waffles rise.

  • Stir, but do not over mix otherwise they’ll turn out tough (like muffins and pancakes!)

  • Spray the waffle iron with non-stick cooking spray.

  • Pour about 2 tablespoons (or more, if your waffle iron is bigger) of batter for each waffle on the waffle maker and cook for a few minutes until they don’t stick to the iron anymore.

  • Resist the urge to peek and don’t lift the lid!

  • Top with homemade yogurt and fruit.
