Did you know there have been a number official recipes released to celebrate the Coronation of King Charles III on May 6th 2023? They haven’t been publicised much so I thought I’d share them here. There’s a trifle, Asian lamb dish, prawn tacos, a veggie twist on coronation chicken and a coronation quiche made a late entry too! Perfect for your Big Lunch or Coronation Party!

If you’re a regular around here then you’ll know that I created a cheats version of the official trifle for the Platinum Jubilee in 2022. It was a runaway success and so when I saw that there had been a official trifle released for the upcoming Coronation, I knew I had to do the same. And I did.

And then I fell down a rabbit hole of looking at the other official recipes in the toolkit provided on the official Coronation website. I’ve seen very little reference to them despite three of the four being published and available for months. As I know that many people will be planning street parties and other celebrations, I wanted to make sure you’ve had eyes on them.

The big question is will any of these recipes capture the nation like coronation chicken did for Queen Elizabeth I?. To be honest, I doubt it but we’ll see!

  • Gregg Wallace’s Prawn Tacos with Pineapple Salsa

As an additional extra, the royal family has added an extra official recipe – a Coronation quiche. And I’ve very quickly created a cheat’s version of this too!

For full disclosure, other than the trifle recipe, I haven’t followed any of these recipes and I have no clue if they are actually any good. They do sound good however!

Adam Handling’s Strawberry and Ginger Trifle

This is the big one for me and I’m sure lots of people are going to give it a go. But I do beg of you to look at my version of the recipe first. You’ll see why when you read it through!

I’ve created two cheat’s versions of the recipe, one larger trifle that serves around 8 people and another to make 4 individual trifles which are ideal for smaller celebrations.

Nadiya Hussein’s Coronation Aubergine

Clearly this is an attempt to rehabilitate coronation chicken for the 2023 crowd!

I do love Nadiya and from reading the recipe I don’t anticipate that there would be any problems with it either.

Ken Hom’s Coronation Roast Rack of Lamb with Asian-Style Marinade

I can easily credit Ken Hom with inspiring young me with my love of cooking and eating Asian food. So I was very excited to see that he is included in this selection of recipes.

I was however quite surprised to see a recipe using such expensive ingredients. As much as I do love a good rack of lamb, they almost never make an appearance on my table as they are simply too expensive to justify buying.

I do however really want to try this so I will be looking for lamb ribs. Still a treat but much more affordable than a rack. I find Morrisons to be the best source for lamb ribs in my area. Decent butchers should be able to help too but you may find that you need to ask for them unflavoured as they are often sold smothered in that minty glaze that butchers love.

Gregg Wallace’s Prawn Tacos with Pineapple Salsa

I’m going to keep my comments about this recipe short. I am not a fan of Gregg Wallace, he is a greengrocer not a chef and there is a reason that his last restaurant crashed and burned.

I’m all for prawn tacos and love a good fruity salsa. But hard taco shells are not allowed to cross the threshold of my kitchen because they’re an abomination.

Mark Flanagan’s Coronation Quiche with Spinach, Broad Beans & Tarragon

Created by the royal chef and apparently a semi-vegetarian riff on a salmon quiche regularly served by Queen Elizabeth II, this quiche is a late entry to the stable of official recipes.

Felicity Cloake at The Guardian very quickly tested the recipe and the verdict wasn’t terribly complementary. The more I watched the video and read the actual recipe, the more the desire to create a better version overcame me. So I did it!

Created as a quicker and easier version of the official coronation quiche recipe, this Spinach, Edamame Bean & Parsley Quiche turned out delicious! Using ready made pasty and with no blind baking, this simpler recipe includes full step by step images and detailed instructions to make this shortcrust pastry quiche foolproof.
