Les rillettes de poisson c’est vraiment la recette ultra basique qui vous sauve un apéro ou un picnic (top avec quelques crudités dans un sandwich) en quelques minutes !

La recette ? J’ose à peine vous l’écrire tellement elle est simple et basique. Cependant pour bien la réussir voici mes p’tites astuces :

  • Pour des rillettes de poisson moelleuses, utilisez des conserves de poisson à l’huile, comme les sardines ou le thon.
  • Pour une p’tite touche parfumée, optez pour des sardines ou du thon aux recettes originales : au citron, au piment, à la tomate, etc. J’aime bien celles de Phare d’Eckmuhl, bio et péchées en Bretagne, celles de La Belle Iloise aux parfums originaux, ou celles de Jean de Luz du Pays Basque.
  • Evitez la mayonnaise pour apporter du moelleux aux rillettes, ça apporte surtout du gras, et si vous utilisez des conserves de poisson à l’huile ce serait trop.
  • Remplacez par du fromage blanc, ou mieux du petit suisse. Sa texture plus sèche mais terriblement moelleuse est parfaite. Son conditionnement aussi, c’est le format idéal pour une boîte de sardines.
  • Ajoutez la p’tite touche fraîche qui change tout : des herbes ciselées, un peu d’échalote hachée ou du zeste de citron râpé. Ça fonctionne même si vous rajoutez les trois !
  • Et dernier des secrets : il faut toujours avoir au réfrigérateur une ou deux boîtes de sardines ou de thon, comme ça mixées au dernier moment elles seront quand même à la bonne température pour la dégustation !

Ma recette rapide et simple des rillettes de sardines avec des sardines au citron en conserves

Notes

Astuce Batch-Cooking : ces rillettes se conservent facilement 5 jours au réfrigérateur, dans une petite boîte hermétique. Elles sont idéales pour les tartines, apéro, picnic

Ingrédients

  • Sardines au citron en conserve
  • 1 citron
  • 3 brins de ciboulette
  • 1 petit suisse nature

Instructions

  1. Ouvrir la boîte de sardines, mixer tout son contenu (sardines entières, citron, marinade).
  2. Ajouter un peu de zeste de citron râpé ainsi que le petit suisse.
  3. Mixer à nouveau jusqu’à obtenir une texture lisse.
  4. Ajouter un peu de poivre, de zeste de citron et de ciboulette et servir.

    Ma version est au fromage frais type st moret. J’ai aussi fait un tartare aux algues avec du chou rouge en pickles et un peu de tahine : un délice !

    Recette testée hier et approuvée par tout le monde et de plus rapide à faire.
    Très bonne idée à faire et à refaire, de mon côté n’ayant plus de petit-suisse j’ai remplacé ce dernier par du philadelphia, le résultat était bon, mais avais-je la même texture qu’avec un petit-suisse a voir pour le prochain apéro.
